Green salad recipe

A light salad to complement our delicious cassoulet.

Green salad

Ingredients

  1. 2 chicory, leaves separated and washed
  2. 4 Little Gem lettuce, leaves separated and washed
  3. Handful watercress, washed
  4. 1 bunch red spring onions, finely sliced
  5. 6 tbsp olive oil
  6. 2 tbsp fresh orange juice
  7. 1/2 tsp Dijon mustard

Method

  1. 1. Mix the salad ingredients in a large bowl.
  2. 2. In a small bowl, whisk the olive oil, orange juice and mustard, then season.
  3. 3. Divide the salad between 8 bowls and drizzle the dressing over. Serve with or after the cassoulet.
