Griddled chicken with spiced tomato couscous recipe

Serve this warm, satisfying chicken dish with tzatziki on the side.

Griddled chicken with spiced tomato couscous

Ingredients

  1. 2 chicken breasts
  2. 200ml boiling water
  3. 1 tbsp curry paste
  4. ½ lime
  5. 150g couscous
  6. Good handful of cherry tomatoes

Method

  1. 1. Heat a griddle pan, then add chicken breasts – skin side down – and cook for 10-12 minutes, turning once (or cook under a hot grill).
  2. 2. Meanwhile, measure out 200ml boiling water and stir in curry paste and the juice of half a lime. Pour the water over couscous and set aside for 5 minutes.
  3. 3. Quarter cherry tomatoes and mix into the couscous. Divide the couscous between 2 plates, place a chicken breast on top and garnish with mint leaves.
