No one can resist bowls of home made crunchy chips, and these are made without the faff of a deep-fat fryer.
Ingredients
- 1kg floury potatoes, such as Maris Piper or King Edward, unpeeled
- 3 tbsp sunflower oil
Method
- 1. Preheat the oven to 220°C/fan200°C/gas 7. Slice the potatoes into 2cm thick chip shapes, placing them in a large bowl of cold water as you go. Rinse the potatoes well and drain, then pat dry with kitchen paper.
- 2. Divide the oil between 2 large baking trays and heat in the oven for 2-3 minutes. Add the chips to the trays, toss well in the oil and roast for 40 minutes, turning halfway, until golden and really crispy. Pile into bowls to serve and sprinkle with a few pinches of sea salt.
