A wonderfully fruity loaf recipe to give as a gift or keep in the bread bin and eat with the family.

Jewelled fruit loaf

Ingredients

  1. 100g whole hazelnuts
  2. 125g whole almonds
  3. 125g stoned dates
  4. 150g glacé pineapple
  5. 150g glacé green and red cherries
  6. 150g ready-to-eat dried apricots
  7. 150g seedless raisins
  8. 100g golden sultanas
  9. Finely grated zest of 1 lemon
  10. 100g plain flour
  11. 1/2 tsp each baking powder, mixed spice and salt
  12. 125g golden caster sugar
  13. 3 large eggs
  14. 1 tsp vanilla extract
  15. 2 tbsp brandy

Method

  1. 1. Preheat oven to 150°C/fan130°C/gas 2. Grease and line a 27cm x 11cm loaf tin with non-stick baking paper. Put the nuts, fruit and zest into a large bowl. Sift the flour, baking powder, spice and salt over the fruit. Add the sugar and mix well.
  2. 2. Beat together the eggs, vanilla and brandy, then stir into the mixture. Spoon into the tin and bake for 11/2-13/4 hours, until a skewer inserted into the middle comes out clean. Leave to cool completely.
  3. 3. To assemble your gift Wrap in waxed paper or clear cellophane and tie with a bow. Keeps in an airtight box for up to three weeks.
