A wonderfully fruity loaf recipe to give as a gift or keep in the bread bin and eat with the family.
Ingredients
- 100g whole hazelnuts
- 125g whole almonds
- 125g stoned dates
- 150g glacé pineapple
- 150g glacé green and red cherries
- 150g ready-to-eat dried apricots
- 150g seedless raisins
- 100g golden sultanas
- Finely grated zest of 1 lemon
- 100g plain flour
- 1/2 tsp each baking powder, mixed spice and salt
- 125g golden caster sugar
- 3 large eggs
- 1 tsp vanilla extract
- 2 tbsp brandy
Method
- 1. Preheat oven to 150°C/fan130°C/gas 2. Grease and line a 27cm x 11cm loaf tin with non-stick baking paper. Put the nuts, fruit and zest into a large bowl. Sift the flour, baking powder, spice and salt over the fruit. Add the sugar and mix well.
- 2. Beat together the eggs, vanilla and brandy, then stir into the mixture. Spoon into the tin and bake for 11/2-13/4 hours, until a skewer inserted into the middle comes out clean. Leave to cool completely.
- 3. To assemble your gift Wrap in waxed paper or clear cellophane and tie with a bow. Keeps in an airtight box for up to three weeks.
