Lemon and parsley linguine with Grana Padano recipe

Keep it simple with this refreshing pasta dish.

Lemon and parsley linguine with Grana Padano

Ingredients

  1. 400g linguine
  2. 80g roughly chopped fresh parsley
  3. Zest and juice of 4 unwaxed lemons
  4. 1 garlic clove, crushed
  5. 100g Grana Padano, grated, plus extra for serving
  6. 75ml extra-virgin olive oil

Method

  1. 1. Bring a large pan of salted water to the boil, add the pasta and cook for 10-12 minutes, until al dente.
  2. 2. Meanwhile, in a large bowl, mix the parsley with the lemon zest and juice, garlic, Grana Padano and olive oil. Season well with salt and freshly ground black pepper.
  3. 3. When the pasta is cooked, drain well and add to the sauce. Toss to combine and serve with grated Grana Padano for sprinkling.

Chef's tip

Spice up this pasta dish with a teaspoon of chopped red chilli added to the sauce.
