Mexican breakfast with flour tortillas and avocado

Ingredients

  1. 4 flour tortillas
  2. 25g butter
  3. 1 deseeded, finely sliced red chilli
  4. 2 sliced spring onions
  5. 2 deseeded, chopped tomatoes
  6. 6 free-range eggs
  7. 2 sliced avocados
  8. chopped fresh coriander
  9. lime wedges

Method

  1. 1.Heat the tortillas in a hot pan until golden, then remove. Melt the butter in the pan, then add the chilli, spring onions and chopped tomatoes.
  2. 2. In a bowl, whisk the eggs, season, then add to the pan, stirring until the eggs are just cooked. Divide among the tortillas and serve with the avocados, chopped fresh coriander and lime wedges.
