A bunch of fresh mint
2 tsp caster sugar
2 tbsp red wine vinegar
1. Pick and finely chop the leaves of a bunch of fresh mint. Place in a small bowl and stir in 2 tsp caster sugar. Pour over 75ml boiling water, stir to dissolve the sugar, then add 2 tbsp red wine vinegar. Leave to cool and infuse.
- Try adding finely chopped red chilli for a hint of spice, or 1 tbsp redcurrant jelly instead of the sugar.
