Clafoutis is a mouthwateringly good French dessert - this version is a fabulous fluffy pancake bursting with fruit.
Ingredients
- 500g bag frozen summer fruits
- Vegetable oil, for greasing
- 125g plain flour
- 5 tbsp golden caster sugar
- 3 medium eggs, lightly beaten
- 400ml skimmed milk
Method
- 1. Sit the unopened bag of frozen fruits in a sink filled with warm water for 5-10 minutes, to thaw. Open and tip the fruit into a sieve resting over a bowl, to catch the juice. Set aside to drain completely.
- 2. Meanwhile, preheat the oven to 180C/fan160C/gas 4. Lightly brush a 1.5-litre medium-deep baking dish with a little vegetable oil.
- 3. Make the batter. Sift the flour with a pinch of salt into a bowl. Stir in 4 tablespoons of the sugar, make a well in the centre and pour in the eggs. Gradually add the milk, mixing as you go, until you have a smooth, thin batter. Tip the fruit into the baking dish (reserve the juice) and spread in a single layer. Pour over the batter and bake for 50 minutes, until the batter is risen, cooked through in the centre and pale golden.
- 4. While the clafoutis is cooking, make the berry sauce. Put the drained juice from the fruit in a saucepan, along with the remaining sugar. Place over a low heat, stir to dissolve the sugar, then bring to the boil and bubble until reduced and syrupy. Serve drizzled over the clafoutis.
