This no-cook dish is so simple to make – a perfect dish for vegetarians.
Ingredients
- 150g couscous
- 200g marinated peppers in oil, drained
- 125g ball buffalo mozzarella
- A good handful fresh basil leaves
- The juice of 1/2 lemon
Method
- 1. Put 150g couscous in a large bowl, pour over 175ml boiling water, cover and set aside for 5 minutes.
- 2. Fluff up the grains with a fork. Add 200g marinated peppers in oil, drained (reserve 2 tablespoons of the oil), 125g ball buffalo mozzarella, drained and roughly chopped into chunks, and a good handful fresh basil leaves, roughly torn. Pour over the juice of 1/2 lemon, add the reserved oil and toss everything together.
- 3. Season to taste and divide between shallow bowls to serve.
