Olive, chorizo and tomato pasta recipe

Olive, chorizo and tomato pasta is a simple recipe to quickly make, and such delicious ingredients give this Italian a strong flavour that should be enjoyed by even the sternest of pasta aficionados.

Ingredients

  1. 250g fresh pasta
  2. 400g can cherry tomatoes
  3. 125g mozzarella, drained and chopped
  4. 100g chorizo, chopped
  5. 75g large green olives, pitted
  6. 150ml boiling water
  7. 50g Parmesan cheese, grated (to serve).

Method

  1. 1. Preheat the oven to 200°C/fan 180°C/gas 6.
  2. 2. Tip fresh pasta into 2 individual dishes or a medium-sized baking dish, then pour over cherry tomatoes. Add mozzarella, chorizo and olives.
  3. 3. Season, pour in boiling water and mix everything together.
  4. 4. Cover tightly with foil, then bake in the oven for
  5. 20 minutes until piping hot and the pasta is cooked through.
  6. 5. Divide between plates, then grate over Parmesan cheese to serve.
