A homely, warming meal of sausages and tomatoes that will satisfy the largest of appetites.

Oven-baked sausages and balsamic tomatoes

Ingredients

  1. 12 sausages
  2. 6 garlic cloves, sliced
  3. 2 red onions, cut into wedges
  4. A little olive oil
  5. 600g cherry tomatoes, halved
  6. 3 tbsp balsamic vinegar
  7. A handful torn fresh basil leaves

Method

  1. 1. In a large roasting tin, toss together the sausages, garlic and red onions with a little olive oil.
  2. 2. Roast in a preheated oven at 180°C/fan160°C/gas 4 for 15 minutes, until golden.
  3. 3. Add the cherry tomatoes and balsamic vinegar. Season and toss together gently.
  4. 4. Return to the oven for a further 15 minutes, stir in a handful torn fresh basil leaves and serve.

Wine Recommendation

An Aussie Cabernet-Shiraz blend is a successful match.

Fantastic - made this last night, it was so simple and really tasty - served it with some fresh crusty bread and butter. Only two of us so we are having it again tonight!!
