Kick-start the weekend with a scrumptious, vitamin-packed smoothie.

Papaya and banana smoothie

Ingredients

  1. 2 ripe papayas
  2. 2 chopped bananas
  3. juice of 2 limes
  4. lime zest
  5. 3 tbsp of Greek yogurt
  6. 600ml apple juice

Method

  1. 1. Place the diced flesh of 2 ripe papayas, 2 chopped bananas, grated zest and juice of 2 limes, 3 tablespoons of Greek yogurt and 600ml apple juice in a food processor and whizz until smooth.
  2. 2. Transfer to a jug and chill for 30 minutes, then pour into glasses and serve.

Chef's tip

Great on its own or alongside pan-charred brioche or hot buttered toast.
