Serve these parcel-roasted potatoes with grilled trout, asparagus wrapped in Parma ham and cinnamon baked fruit as part of an elegant menu. The cook-in-paper method means supper is ready in just an hour.
Ingredients
- 750g baby new potatoes
- Handful each fresh thyme and fresh rosemary leaves, finely chopped
- 2 tbsp olive oil
- 4 knobs of butter
- 4 splashes of white wine
Method
- 1. Preheat the oven to 200°C/fan180°C/gas 6. Cut 4 large squares of baking paper. Mix the potatoes with the herbs and oil. Season well and divide among the pieces of paper, topping each portion with a knob of butter. Bring up the edges of the paper, add a splash of wine to each portion and tie with string to create a parcel. Place on a baking sheet and bake for 30-40 minutes.
