Kids can put this easy, meaty sandwich recipe together in no time and they'll love filling the bread with all those lovely ingredients.

Pastrami meat feast toasted panini

Ingredients

  1. 1 panini roll
  2. 2 tbsp low-fat mayonnaise
  3. 1 tsp wholegrain mustard
  4. 2-3 slices pastrami
  5. 1 gherkin, drained and sliced
  6. 2 tbsp shredded iceberg lettuce
  7. 3 slices ripe tomato

Method

  1. 1. Halve the panini and toast both sides under a hot grill.
  2. 2. Mix the mayonnaise and mustard together and spread over the cut sides of the panini.
  3. 3. Top with pastrami slices, gherkin, lettuce and tomato. Sandwich together with the top piece of the panini roll.

Chef's tip

Pastrami is a type of cured beef that’s as easy to use as ham. Wrap any leftover slices in cling film and keep in the fridge for up to 5 days.
