Kids can put this easy, meaty sandwich recipe together in no time and they'll love filling the bread with all those lovely ingredients.
Ingredients
- 1 panini roll
- 2 tbsp low-fat mayonnaise
- 1 tsp wholegrain mustard
- 2-3 slices pastrami
- 1 gherkin, drained and sliced
- 2 tbsp shredded iceberg lettuce
- 3 slices ripe tomato
Method
- 1. Halve the panini and toast both sides under a hot grill.
- 2. Mix the mayonnaise and mustard together and spread over the cut sides of the panini.
- 3. Top with pastrami slices, gherkin, lettuce and tomato. Sandwich together with the top piece of the panini roll.
Chef's tip
Pastrami is a type of cured beef that’s as easy to use as ham. Wrap any leftover slices in cling film and keep in the fridge for up to 5 days.
