Bring new life to familiar meals with this simple salad that's bursting with vibrant citrus flavours.
Ingredients
- 1 large pink grapefruit, peeled and segmented, plus 2 tbsp of the juice
- ½ tsp sugar
- 1 tsp wholegrain mustard
- 4 tbsp extra-virgin olive oil
- 150g pack radishes
- 2 x 50g bags watercress
Method
- 1. Whisk ½ tsp sugar, 1 tsp wholegrain mustard and some salt and pepper into the grapefruit juice, then whisk in 4 tbsp extra-virgin olive oil.
- 2. Finely slice the radishes and mix with the watercress and grapefruit segments.
- 3. Drizzle with the dressing and serve with burgers or steak.
Chef's tip
Try adding some crumbled soft goat’s cheese and some cooked shredded chicken breast for a speedy and tasty meal.
