Potted prawns recipe

While not strictly rillettes, this recipe follows the same principle, preserving the prawns in a spiced butter.

Ingredients

  1. 100g unsalted butter
  2. 1 blade mace
  3. A grating of nutmeg
  4. The zest of ½ lemon
  5. A good pinch of cayenne pepper
  6. 400g cooked and peeled Atlantic prawns
  7. Buttered bread, lemon wedges and a crisp salad, to serve

Method

  1. 1. Melt unsalted butter in a medium pan with mace, nutmeg, lemon zest and a good pinch of cayenne pepper. Add the prawns and gently heat for 2-3 minutes.
  2. 2. Remove the mace, divide between 4 ramekins and cool. Chill for 30 minutes, then pour a little melted butter over the top of each ramekin and chill until ready to serve.
  3. 3. Serve at room temperature with buttered bread, lemon wedges and a crisp salad.
