Making your own deli-style sandwich is no sweat!

Red pepper and goat's cheese toasted panini

Ingredients

  1. 1 panini roll
  2. 2 tbsp low-fat mayonnaise
  3. 3 pieces roasted red pepper from a jar (about 25g), dried on kitchen paper
  4. 50g soft goat’s cheese, cut into slices
  5. Few lettuce leaves

Method

  1. 1. Halve the panini and toast both sides under the hot grill. Spread the cut sides with mayonnaise.
  2. 2. Arrange the pepper pieces on top of the mayonnaise-coated base. Top with goat’s cheese slices and season with black pepper. Add a few small lettuce leaves and sandwich together with the top of the panini.

Chef's tip

You’ll find red peppers, ready roasted and sold in jars, at most supermarkets – they taste sweet and tender and are a great option for vegetarians. Once the jar is open, keep it in the fridge and use within 1 week.
