- 1kg new potatoes, quartered
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- 50g grated fresh Parmesan or vegetarian alternative
- Preheat the oven to 180°C/fan160°C/gas 4. Place the potatoes on a large baking tray and toss with the olive oil. Place on the top shelf of the oven and roast for 20 minutes.
- Toss with the mustard, then add the Parmesan, toss well, then roast for a further 5 minutes until golden. Best served with roasted fish with bean and herb salad.
