1kg new potatoes, quartered
2 tbsp olive oil
1 tbsp Dijon mustard
50g grated fresh Parmesan or vegetarian alternative
1. Preheat the oven to 180°C/fan160°C/gas 4. Place the potatoes on a large baking tray and toss with the olive oil. Place on the top shelf of the oven and roast for 20 minutes.
2. Toss with the mustard, then add the Parmesan, toss well, then roast for a further 5 minutes until golden. Best served with roasted fish with bean and herb salad.
