Roasted pepper, lime and coriander butter recipe

Roasted pepper, lime and coriander butter

Ingredients

  1. 125g soft butter
  2. 2 roasted peppers from a jar, chopped
  3. grated zest of 1 lime
  4. 1 red chilli, deseeded and chopped
  5. some fresh coriander, chopped.

Method

  1. 1. Mix 125g soft butter with 2 roasted peppers from a jar, chopped, the grated zest of 1 lime, 1 red chilli, deseeded and chopped, and some fresh coriander, chopped.
  2. 2. Wrap in foil, shape into a log and chill until firm.
