This delicious sandwich filling is easy to make and perfect in a fresh roll for a light lunch.
Ingredients
- 1 onion
- Knob of butter
- 1 ready-roasted red pepper
- 250g sweetcorn
- 1/2 tsp celery seeds
- 1 tsp mustard powder
- 1 tsp dried chili flakes
- 60g granulated sugar
- 150 ml white wine vinegar
- Milano salamo
- 4 crusty rolls
Method
- 1. Gently sauté a finely diced onion in a little butter, then add 1 ready roasted red pepper, diced, 250g sweetcorn, ½ tsp celery seeds, 1 tsp mustard powder, 1 tsp dried chilli flakes, 60g granulated sugar and 150ml white wine vinegar. Bring to the boil, stirring, then simmer for 15 minutes.
- 2. Season, pour into a sterilised 350ml jar, put the lid on and cool. Put some Milano salami in 4 crusty rolls, top with relish and add watercress.
