Simple braised peas

Ingredients

  1. 50g butter
  2. 2 bunches of spring onions, trimmed and thinly sliced
  3. 900g frozen peas
  4. 125ml fresh vegetable stock, hot
  5. 1 bunch of fresh chives, chopped (optional)

Method

  1. 1. Melt the butter in a large pan over a medium-low heat. Add the spring onions and cook gently for 1 minute, until soft. Increase the heat and add the peas and stock. Season, cover and cook for 4 minutes. Sprinkle with chives, if using, to serve.
