This chicken sandwich filling is easy to make and perfect in a fresh roll for a light lunch.
Ingredients
- 1 fat garlic clove
- Large bunch of fresh flatleaf parsley
- 25g pine nuts
- 150ml olive oil
- 25g grated Pecorino
- Dollop of good quality mayonnnaise
- Butter, for spreading
- 4 crusty rolls
- Gem lettuce leaves
- 155g sliced smoked chicken
Method
- 1. In a small food processor, pulse together 1 fat garlic clove, a large bunch of fresh flatleaf parsley and 25g pine nuts. With the motor running, drizzle in 150ml olive oil. Transfer to a bowl, season, then stir in 25g finely grated Pecorino and a dollop of good-quality mayo.
- 2. Butter four crusty rolls, fill with gem lettuce leaves and 155g sliced smoked chicken, then top with generous dollops of the pesto mix.
