Smoked chicken, parsley pesto and crisp gem lettuce recipe

This chicken sandwich filling is easy to make and perfect in a fresh roll for a light lunch.

Smoked chicken, parsley pesto and crisp gem lettuce

Ingredients

  1. 1 fat garlic clove
  2. Large bunch of fresh flatleaf parsley
  3. 25g pine nuts
  4. 150ml olive oil
  5. 25g grated Pecorino
  6. Dollop of good quality mayonnnaise
  7. Butter, for spreading
  8. 4 crusty rolls
  9. Gem lettuce leaves
  10. 155g sliced smoked chicken

Method

  1. 1. In a small food processor, pulse together 1 fat garlic clove, a large bunch of fresh flatleaf parsley and 25g pine nuts. With the motor running, drizzle in 150ml olive oil. Transfer to a bowl, season, then stir in 25g finely grated Pecorino and a dollop of good-quality mayo.
  2. 2. Butter four crusty rolls, fill with gem lettuce leaves and 155g sliced smoked chicken, then top with generous dollops of the pesto mix.
