Make your own version of this classic takeaway dish. You can have home-made deep fried chicken in a spicy batter on the table (or the sofa) in just half an hour.
Ingredients
- 150g plain flour
- 1 tbsp celery salt
- 2 tsp hot paprika
- 2 tsp smoked paprika
- 1 tsp english mustard powder
- 2 large free-range eggs, lightly beaten
- 4 chicken breasts or 6 boneless thighs, skinless and cut into nuggets
- 300ml vegetable oil
Method
- 1. Mix the flour, celery salt, both the paprikas and mustard powder in a large bowl. Place the beaten eggs in a separate bowl. Season the chicken with salt and black pepper.
- 2. Heat the vegetable oil in a deep frying pan or deep-fat fryer to 180°c (at which point, a cube of bread dropped in it should turn golden brown after 30 seconds). Dip the chicken pieces in the flour mixture, then in the egg mixture, then in the flour mixture again. Fry, in batches, for 8 minutes until golden brown and cooked through. Drain on kitchen paper, sprinkle with salt and serve with lemon wedges and coleslaw.
