Spiced and buttered crab recipe

If you can’t get fresh white crabmeat, buy frozen and thaw it overnight in the fridge. Drain off the excess liquid before using.

Spiced and buttered crab

Ingredients

  1. 2 hard-boiled eggs, finely chopped
  2. 400g fresh white crabmeat
  3. 2 tbsp mayonnaise
  4. 40g butter, melted
  5. 1 tsp cayenne pepper, plus extra to sprinkle
  6. Large pinch of ground allspice
  7. 1 pink shallot, thinly sliced
  8. Small handful of fresh basil leaves

Method

  1. 1. Put the eggs, crab, mayonnaise, butter and spices into a bowl. Mix and season to taste. Divide between 6 small bowls or ramekins. Chill until ready to serve.
  2. 2. Top each serving with a few slivers of shallot, some fresh basil and a sprinkling of cayenne pepper. Serve with warm French bread or toast.
