Scones are a popular British quickbread but we've got the Scots to thank for these treats.
Ingredients
- 225g self-raising flour
- 1/4 tsp ground mixed spice
- 50g butter
- 50g caster sugar
- 25g sultanas
- Grated zest of 1 orange
- 1 egg, beaten
- 4 tbsp milk
Method
- 1. Sift the flour and ground spice together in a bowl and rub in the butter until the mixture resembles fine breadcrumbs. Stir in the sugar, sultanas and orange zest and make a well in the centre. Add the egg and sufficient milk to make a firm dough. On a lightly floured surface, roll out to a 1cm thickness and cut into triangles.
- 2. Cook on a moderately greased griddle pan or heavy-based frying pan for about 5 minutes each side until the scones are browned and cooked. Spread with butter, if you like.
Chef's tip
These are based on classic Welsh cakes. They are cooked on a flat griddle, but a decent non-stick or cast-iron frying pan will work just as well.
