Steamed lemon rice recipe

For a Chinese-inspired menu that's ready in 60 minutes, serve this rice with spring rolls, sweet and sour prawns, stir-fried greens and exotic fruit salad.

Steamed lemon rice

Ingredients

  1. 300g basmati rice
  2. Grated zest and juice of 1 lemon
  3. 25g butter
  4. 600ml chicken stock
  5. Large bunch of coriander, leaves chopped

Method

  1. 1. Place the rice, lemon zest and juice, butter and stock in a pan, then bring to the boil. Reduce to a low simmer and cover. Cook for 12 minutes, then remove from the heat and leave covered for 5-10 minutes. Stir through most of the coriander. Serve sprinkled with the remaining coriander.
