Low in fat and packed with flavour, this cheap chicken recipe for two is deliciously sweet, sour and sticky.
Ingredients
- 3 globes stem ginger in syrup
- 2 tablespoons honey
- 2 tablespoons soy sauce
- Finely grated zest of 2 limes
- The juice of 1 lime
- 2 garlic cloves, crushed
- 6 skinless chicken thighs
- Serve with steamed basmati rice and tenderstem broccoli.

Method
- 1. Preheat the oven to 230°C/fan210°C/gas 8. Drain and finely dice 3 globes stem ginger in syrup and mix with 2 tablespoons honey, 2 tablespoons soy sauce, the finely grated zest of 2 limes, the juice of 1 of the limes and 2 garlic cloves, crushed, in a bowl.
- 2. Add 6 skinless chicken thighs and mix together well. Spread out in a foil-lined or ceramic baking dish and bake for 20 minutes, turning over halfway, until cooked through.
- 3. Serve the chicken with steamed basmati rice and tenderstem broccoli.
