Strawberry shrikhand, spiced yogurt recipe

Celebrate strawberries with this Indian recipe for shrikhand, or spiced yogurt.

Strawberry shrikhand, spiced yogurt

Ingredients

  1. 500g Greek yogurt
  2. 200g strawberries
  3. Icing sugar to taste
  4. 1/4-1/2 tsp ground cardamom
  5. Fresh strawberries, to decorate
  6. Chopped pistachios, to decorate

Method

  1. 1. Drain the yogurt in a fine sieve, over a bowl in the fridge, for about 1 hour.
  2. 2. Whizz the strawberries in a food processor, adding sugar to taste, to make a coulis.
  3. 3. Stir icing sugar to taste into the strained yogurt with the cardamom. Stir through the coulis and divide between dishes. Chill until required.
  4. 4. To serve, decorate with chopped strawberries and pistachios.
