A simple summer salad that's highly nutritious. It looks lovely too.

Superfood salad

Ingredients

  1. 4 flaked smoked mackerel fillets
  2. 8 thinly sliced radishes
  3. 1 head broccoli, cut into florets, then blanched and refreshed under cold running water
  4. 2 tbsp sunflower seeds
  5. A good handful sprouts (such as alfalfa and purple radish)
  6. 3 tbsp olive oil and 1 tbsp red wine vinegar for a dressing

Method

  1. 1. In a large bowl, mix together mackerel fillets, radishes, broccoli, sunflower seeds and sprouts.
  2. 2. Mix olive oil and red wine vinegar for a dressing and pour over to serve.

Wine Recommendation

A spritzer based on dry Riesling and cool sparkling water.
