This wonderfully fresh and spicy Asian-style beef dish goes perfectly with rice or egg noodles.
Ingredients
- 2 tbsp groundnut oil
- 3 shallots
- 1 heaped tbsp chilli jam
- 2 tsp shrimp paste
- 1½ tbsp tomato ketchup
- 1 lime
- 4cm piece fresh ginger
- 2 sirloin steaks
- 150g mangetout
- 4 spring onions
- Small handful roasted peanuts
- Fresh coriander leaves
Method
- 1. Heat 2 tbsp groundnut oil in a large pan or wok and fry 3 shallots, finely diced, for 1 minute until softened.
- 2. In a bowl, mix 1 heaped tbsp chilli jam with 2 tsp shrimp paste, 1½ tbsp tomato ketchup, the juice of 1 lime and a 4cm piece fresh ginger, grated.
- 3. Stir the paste into the shallots and fry for 2 minutes. Slice 2 sirloin steaks into strips, season and add to the pan with 150g mangetout. Turn up the heat and stir-fry for 3 minutes. Add 4 spring onions, sliced, and stir-fry for another minute.
- 4. Spoon between bowls, scatter over a small handful roasted peanuts, roughly chopped, and some fresh coriander leaves, chopped. Serve with steamed basmati rice, if you like.
