Thai chilli beef recipe

This wonderfully fresh and spicy Asian-style beef dish goes perfectly with rice or egg noodles.

Ingredients

  1. 2 tbsp groundnut oil
  2. 3 shallots
  3. 1 heaped tbsp chilli jam
  4. 2 tsp shrimp paste
  5. 1½ tbsp tomato ketchup
  6. 1 lime
  7. 4cm piece fresh ginger
  8. 2 sirloin steaks
  9. 150g mangetout
  10. 4 spring onions
  11. Small handful roasted peanuts
  12. Fresh coriander leaves

Method

  1. 1. Heat 2 tbsp groundnut oil in a large pan or wok and fry 3 shallots, finely diced, for 1 minute until softened.
  2. 2. In a bowl, mix 1 heaped tbsp chilli jam with 2 tsp shrimp paste, 1½ tbsp tomato ketchup, the juice of 1 lime and a 4cm piece fresh ginger, grated.
  3. 3. Stir the paste into the shallots and fry for 2 minutes. Slice 2 sirloin steaks into strips, season and add to the pan with 150g mangetout. Turn up the heat and stir-fry for 3 minutes. Add 4 spring onions, sliced, and stir-fry for another minute.
  4. 4. Spoon between bowls, scatter over a small handful roasted peanuts, roughly chopped, and some fresh coriander leaves, chopped. Serve with steamed basmati rice, if you like.
