The simplest potato salad ever

Ingredients

  1. 800g new potatoes
  2. 1 shallot or 1 small red onion
  3. 6 radishes
  4. Juice of 1/2 lemon
  5. 3 tbsp olive oil
  6. 1 tbsp capers in salt, soaked in water for 10 minutes then drained
  7. Small handful of flatleaf parsley or chervil, roughly chopped

Method

  1. 1. Boil the potatoes until just tender. While the potatoes are boiling, thinly slice the shallot or onion and radishes.
  2. 2. Make a simple dressing by mixing together the lemon juice and olive oil, then season to taste.
  3. 3. Drain the potatoes, cool slightly and cut any large ones in half. While they are still warm, toss in the dressing, along with the shallot or onion, radishes and capers. Stir in the roughly chopped parsley or chervil to serve.
