Tuna and tomato fry-up recipe

Canned food is great – it doesn’t need to be chilled or cooked and is packed with goodness. Canned fish such as trusty tuna or salmon (and clams or crab for the more adventurous) all taste great teamed with tomatoes. You only need four ingredients for this delicious dish, and it tastes just as good served with bread, pasta, rice or potatoes.

Ingredients

  1. 400g can tuna chunks in oil
  2. 2 red onions, sliced
  3. 2 garlic cloves, crushed
  4. 2 x 400g cans cherry tomatoes in juice or canned chopped tomatoes

Method

  1. 1. Open the can of tuna and drain the oil from the can into a large pan. Set aside the can with the tuna. Heat the oil for about 30 seconds, then add the onions and garlic and cook gently for 5 minutes. Add the tuna and the canned tomatoes with their juice and warm through for 5 minutes. Season with freshly ground black pepper and it’s ready!
