Turkey, beetroot and chickpea burgers recipe

Chickpeas make a surprisingly good adition to a burger. This turkey, beetroot and chickpea combo is most definitely a burger that must be tried

Turkey, beetroot and chickpea burgers

Ingredients

  1. 1 400g tin of chickpeas
  2. 500g turkey mince
  3. 2 medium ready-cooked beetroot
  4. 1 onion
  5. 2 tsp fennel seeds
  6. 1 tbsp apple sauce
  7. 3 tbsp parsley, chopped
  8. Vegetable oil

Method

  1. Pulse a drained tin of chickpeas in a food processor until roughly chopped. Transfer to a bowl and mix with 500g turkey mince, 2 medium ready-cooked beetroot, coarsely grated, 1 finely chopped onion, 2 tsp fennel seeds, 1 tbsp apple sauce and 3 tbsp chopped fresh parsley. Season and form into 8 burgers. Heat 2 tbsp vegetable oil in a frying pan and cook the burgers for 6-7 minutes on each side until cooked through. Serve in toasted buns topped with rocket and mayonnaise.
