Zingy tuna and wasabi pasta salad recipe

This Asian-inspired pasta recipe makes a pleasant lunch and a welcome change to a traditional pasta salad.

Zingy tuna and wasabi pasta salad

Ingredients

  1. 150g small pasta shapes
  2. ½ cucumber
  3. 5 spring onions, finely sliced
  4. Grated zest and juice of ½ lime
  5. 1 can drained tuna
  6. 3 tbsp light mayonnaise
  7. 1 tsp wasabi paste
  8. 1 tsp sesame oil,
  9. A handful of pea shoots

Method

  1. 1. Cook the pasta in a pan of boiling water as per the packet instructions.
  2. 2. Meanwhile, roughly chop ½ cucumber and finely slice 5 spring onions. Stir the grated zest and juice of ½ lime and 1 can drained tuna into 3 tbsp light mayonnaise and 1 tsp wasabi paste.
  3. 3. Once the pasta is cooked, drain, refresh in cold water, drain again, then stir through 1 tsp sesame oil, a handful of pea shoots and all the other ingredients.
  4. 4. Spoon half into a container and keep the other half in the fridge for the next day. Makes 2 portions.
