This is a natural sugar that comes from the sap of the coconut tree, similar in taste to brown sugar, it is growing in popularity as a substitute.

How to use leftover coconut palm sugar

  • Caramelised banana. Halve a banana lengthways, put it on a lined baking sheet and sprinkle with coconut palm sugar. Put under a grill heated to medium-high and allow the sugar to caramelise. Serve warm with vanilla ice cream, sprinkled with toasted coconut shavings.
  • Sweet oats. Cook porridge oats in coconut milk (the drinking kind, such as Koko, bought in cartons) with a pinch of nutmeg, cinnamon or mixed spice. Serve sprinkled with coconut palm sugar.
