It's Wednesday pasta time! Today we bring you a verdant showstopper that's easy enough for weeknights. @pickled_plates our food producer offers up her wild garlic pesto lasagne. She says: "Wild garlic is finally out in full swing; in gardens and forests and in bougie green grocers galore! Every year I love discovering and inventing new ways to use it. 2023 was the year of wild garlic butter; I put it in garlic bread, on steaks and even used it to make a wild garlic hollandaise for my eggs benedict.⁠

But this year my obsession is wild garlic pesto, and it works stunningly well in this luxurious spring-time lasagne. Simply layers of fresh pasta, béchamel and wild garlic and basil pesto. The original, lasagne alla Portofino, is a Ligurian invention – also home to the classic pesto alla Genovese. I implore you to try this funky foraged version today."⁠

Look for clusters of broad, pure green spearhead-shaped leaves growing in damp areas of deciduous woodland, often close to water – and often near bluebells. If it’s flowering, you’ll see pretty white petalled flower heads sitting on a single stem shooting up from connected leaves. If you’re at all unsure, rub a leaf between finger and thumb to release the garlicky aroma.⁠
