This cranberry sauce side dish is the perfect partner to a turkey roast dinner – it’s got a splash of port in it for extra colour and flavour.

Ingredients

  • 450g fresh cranberries
  • Grated zest and juice of 1 orange
  • 1 cinnamon stick
  • 4 tbsp port
  • 75g caster sugar

Method

  1. Put the cranberries, orange zest, cinnamon stick and port in a saucepan and bring to the boil. Stir in the sugar and orange juice to taste and simmer for 10 minutes. Set aside to cool and thicken. Remove the cinnamon.
  2. To freeze, spoon into a tough freezer bag and freeze for up to 1 month.
  3. To serve, defrost completely, then reheat with a splash of water to loosen.
