We head off to Italy to the meet the award-winning cheesemakers at the world’s most successful drug rehab community, San Patrignano. Massimo Bottura even puts the cheese on his menu at Osteria Francescana, which is consistently voted one of the top restaurants in the world. Massimo also heads to London to cook the city’s leftovers and spread the word about his Food for Soul project.

Next we talk to a lentil producer who survived last year’s devastating earthquakes in the Sibillini mountains (find out more about the natural disaster here). And why Giorgio Locatelli is such a fan of the Castellucio lentil.

Finally, Giuseppe Turi from Chelsea restaurant Enoteca Turi gives us a recipe for artichokes from his mother’s kitchen, and we learn all about fragrant basil – the king of Italian herbs.
