Abstract meringue creatures

Homemade meringue is so worth it and so versatile. You can use these creatures to decorate a stem ginger and salted caramel cake or just enjoy them on their own with a bit of fresh cream. There’s a lot of freedom here to be creative and let go of any ideas of how these ‘should’ look. Dollop it, pipe it, pinch it, add sprinkles… All of it is up to you! There are no rules when it comes to decorating these.

  1. You need an electric whisk for these, but other than that there’s nothing fancy required. You can save the leftover egg yolks to make custard or to add to scrambled eggs or an omelette.

  2. The method for the vegan meringues is essentially the same, it just takes a little longer to whip to soft peaks initially. Also, the vegan version is better baked until completely dry in the centre, and they’re more prone to getting sticky on the outside when exposed to humidity. You can always put them back in the oven on a low heat and this will make them dry again.
