How to use up leftover passata
- Tomato soup
Fry 1 chopped onion, 1 chopped potato, 1 chopped celery stick and 1 crushed garlic clove in olive oil until lightly coloured. Stir in 1 tbsp tomato paste and fry for 1 min. Add 300ml passata, 2 x 400g tins chopped tomatoes, 1 litre vegetable stock and a bay leaf, then simmer for 25 minutes. Remove the bay leaf, blend until smooth, then serve with a swirl of creme fraiche. - Homemade ketchup
Put 300ml passata in a small pan with 2 tbsp brown sugar, 1 tbsp Worcestershire sauce and 1/2 tbsp red wine vinegar. Stir, then cook over a medium heat for 15 minutes until thickened. Cool, season and serve. - Bruschetta
Put 300ml passata, 1 crushed garlic clove and 1 tbsp dried oregano in a small pan and heat until reduced by half, then season well. Heat the grill to high. Slice a baguette into 2cm slices, then grill both sides. Rub one side with a cut garlic clove, then drizzle with olive oil and top with passata and small pieces of mozzarella. Grill to melt the cheese, then serve.
