How to cook like… Emiko Davies: listen now

Australian food writer Emiko Davies married into an Italian family with a rich heritage of food stories. Her new book, Tortellini at Midnight, explores the stories and recipes from her husband’s family.

In this podcast, Emiko teaches me how to make orecchiette, with pork and beef meatballs, in a rich tomato sauce. A recipe you can find in her cook book.

Emiko Davie’s new book Tortellini at Midnight explores heirloom recipes from her husband’s ancestors. She tells me how the book got its name (from her husband’s grandfather Mario) and the history of his family.

From Puglia to Piedmont, we discuss the differences between recipes around Italy, how nostalgia plays a part in the way Italians eat and how food connects generations of people.

One of the recipes is Nonna Anna’s meatballs, which Emiko teaches me how to make. With Luna – Emiko’s daughter – in her arms, she discusses the technique to making orecchiette as well as how to make polpette; the meatballs, with parmesan, breadcrumbs and parsley, in a tomato sauce.
