  1. Chipotles en adobo are smoked chillies in oil, with sugar, vinegar, garlic and spices. You can make this chilli recipe a day or so in advance, up to the end of step 2 (but don’t add the courgette or corn) and keep covered in the fridge. This will give you time to make pork scratchings from the skin. The combination of sweet ancho chillies and fiery, smoky chipotles is a winner.
