  1. To make this vegetarian, replace the cheeses with 300g vegetarian cheddar.

  2. Make the pastry up to 24 hours in advance and keep, wrapped in cling film, in the fridge. The apple and onion mixture can be made up to the end of step 3 up to 24 hours in advance. Keep chilled.
