  1. If your pastry case shrinks or your cauli florets are large you may not fit all the egg filling in. Do fill to the brim but discard any excess.

  2. Make the tart up to 48 hours in advance. Serve at room temperature or after warming for 15 minutes in a medium oven.

  3. Wensleydale is a mild cheese with a particular lactic flavour. You could use cheddar and veggie parmesan-style cheese instead.
