This week, I’m at home with one of British food’s most influential chefs, New Zealander Peter Gordon, to cook up his must-have Christmas recipe: chilli-roast sweet potatoes.

According to Peter,  you simply can’t have Christmas in New Zealand without roast kumara (which are native sweet potatoes) which add a bit of Antipodean flair to the Christmas feast.

Having grown up in New Zealand with a Cockney step-mum, Peter was used to unconventional Christmas meals… a typical Christmas Day meal often included locally caught barbecued fish, followed by classic steamed Christmas pudding!

Fusion is in Peter’s blood. His inquisitive approach to cooking is what shot his restaurant The Sugar Club to fame back in the late 80s. Now, after 18 years at the helm of his iconic Marylebone restaurant The Providores, he tells us that his future is wide open, perhaps even with politics in the pipeline. Listen along as he tells me what it was like cooking for the New Zealand prime minister, Jacinda Ardern and Theresa May at Downing Street and why he relishes such a challenge.
