This is a lovely baked king prawn rice dish with a distinctly Spanish feel. It’s great for a midweek meal and serves a crowd!

  1. If you haven’t got a suitable flameproof casserole, a small roasting tin will do fine. Cover the top with a baking sheet when it goes in the oven. If you want to freeze leftovers, make sure you use fresh and not previously frozen prawns.
