  1. Layer up the gratin in the morning and chill until ready to cook in the evening

  2. To ‘stale’ fresh bread, cut into chunks, then spread on a baking sheet and put in the oven at 120°C/fan100°C/gas ½ for 5-10 minutes until the edges are crisp but not coloured.

    Kirsch is a clear morello cherry liqueur. A few splashes will give dishes an authentic fondue flavour.
