  1. The chestnuts make for a sweeter-than-average stuffing, which goes well with the maple glaze. You could offset the sweetness by serving them with slightly bitter savoy cabbage or kale.

  2. Turning a roasting chicken upside down to rest allows the juices to seep into the breast making it more succulent.
