  1. You can cook the pork up to the end of step 3 in advance and keep in the fridge for 24 hours. Bring up to room temperature before continuing with the recipe.

    No barbecue? Cook the pork to the end of step 3, glaze with some of the barbecue sauce, then return uncovered to the oven for 1 hour, glazing every 10 minutes.
