How to use up leftover cooking mozzarella

  • Meat and cheese pie
    Dot pieces of mozzarella over a red-wine-based meat pie filling before covering with pastry. The cheese will melt as the pie cooks, then ooze out temptingly when you slice into the finished bake.
  • Nibble with drinks
    Dip chunks of mozzarella into seasoned flour, then beaten egg, then dried breadcrumbs. Heat 1cm oil in a frying pan until shimmering, then fry the coated cheese chunks until golden and crisp all over. Serve immediately with a sharp tomato salsa for dunking.
  • Stuffed chillies
    Stuff deseeded fresh jalapeño chillies with small chunks of mozzarella, chopped fresh coriander and lime zest, then grill on high until the chillies are blackened and soft and the cheese is melted. Serve hot.
